Shredded Pork Sandwich

This week I got pork butt from the store for making my favorite shredded pork sandwich recipe. This recipe is easy to put together and doesn’t require many ingredients. Most of the cooking happens in the oven so you are free to do other things.

Shredded pork or pulled pork is a really handy meal to make. I have been making several kinds over the years, so today I am picking out one of the simplest and easiest versions to share with you. This is easy to cook and wonderfully delicious.

I use pork butt as it creates the most flavorful, tender, and juicy result. I add ingredients like balsamic vinegar, sugar, Worcestershire sauce, and ketchup among other things. These ingredients create a sweet and slightly tangy sauce. You can serve this sandwich between buns with a vinegar-based slaw. You can also served it with sides like potato salad, easy baked beans, and corn bread. This could also work as a topping for pizza.

The wonderful thing about this shredded pork filling is that you can feed a crowd without much effort and expense. This filling tastes even better as it sits in the refrigerator, so it’s a good make-ahead meal plan.

Ingredients

Pork

  • 1 tbsp. canola oil
  • 3 lbs. pork butt, cut into 1-inch wide, 2 1/2-inch long pieces
  • 1 tsp. Worcestershire sauce
  • 1/2 tsp. salt
  • 1/2 tsp. ground black pepper

BBQ sauce

  • 1/2 tbsp. minced garlic
  • 1 cup yellow onion, small diced
  • 2/3 cup white sugar
  • 2/3 cup balsamic vinegar
  • 2/3 cup ketchup
  • 1/3 cup mild BBQ sauce (I used kinder)
  • 2 tbsp. Worcestershire sauce
  • 1/4 tsp. salt
  • 1/4 tsp. ground black pepper

Instructions

Preheat oven to 350 degrees Fahrenheit.

Mix all pork ingredients together in a large bowl and set aside.

Mix all BBQ ingredients well in a medium sized bowl and set aside.

Heat oil in a large, heavy bottom, oven proof pan over medium-high heat. Lightly brown the pork pieces on both sides. Turn off the heat and add the BBQ sauce and mix well.

Cover and transfer the pan to preheated oven. Cook for 2 to 2 1/2 hours or until pork is fork tender. (Able to be shredded with a fork.) When cool enough to handle, shred the pork with couple of forks, then mix well with the pan sauce.

Serve the shredded pork with hamburger buns and coleslaw and enjoy!
