Pulled Chicken Sandwiches

At least once a month I pick up a ready-made rotisserie chicken when I go grocery shopping. This comes in handy when I don’t feel like spending too much time in the kitchen. This week I will be sharing my easy pulled BBQ chicken sandwich recipe using rotisserie chicken.

Popeyes-Inspired Cajun Fish Sandwich

Over the past year, Popeyes restaurants have grown tremendously in popularity due to their fried chicken sandwich. Now they’ve launched a Cajun fish sandwich, and I knew I had to go and try it. Surprisingly I have had good luck at a fast food restaurant called Popeyes. Whereas other fast food restaurants seem to get at least one thing wrong — resulting in a sandwich that is dry, cold, soggy, or simply not fresh — Popeyes has done a good job the few times I’ve been to one.
