Popeyes-Inspired Cajun Fish Sandwich

Over the past year, Popeyes restaurants have grown tremendously in popularity due to their fried chicken sandwich. Now they’ve launched a Cajun fish sandwich, and I knew I had to go and try it. I really like the simplicity of a fried fish sandwich, and Popeyes was indeed pretty good, especially given that it’s not too expensive. What I really wanted was to make it at home, however. All you need is a fried fish patty, tartar sauce, and pickles sandwiched between soft, toasted buns.

Ham Salad Sandwich

If you follow my blog you might have noticed that I like to use ham a lot. I like ham for its taste and because I often find a good deal on it at the grocery store. I typically first make a ham dinner with part of it, and then have lots of leftover ham from which I make a variety of dishes. One of the easiest and most popular is ham salad. I serve this as an appetizer or as a filling for a sandwich.

I have been going a bit crazy over bagels recently after a good experience that I had. A great bagel shop opened up in our town recently called the Kinetic Bagel Institute. Last week we stopped by and got a dozen bagels of different varieties. Every single bagel was fresh and delicious, and the prices were reasonable too.

Kale Pesto Sandwich

I love kale but not everybody does. One trick to getting others to enjoy it is to make pesto with it! If you garden or get a CSA (community supported agriculture) box, you might be getting lots of kale right now. If you don’t have kale, you can make pesto with another type of fresh green.

Mushroom Burger with House Sauce

It seems like there is no end to possible burger recipes, and I wouldn’t bother you with another except this one is pretty unique. My house sauce is probably like nothing you’ve tasted, as it has hints of sriracha and cinnamon as well as other more standard ingredients. As you can tell from the name, this burger has mushrooms, but this is a “blended burger” meaning that the mushrooms get into the burger in a creative way.

Popeyes Chicken Sandwich

I love a good fried chicken sandwich once in awhile. To me the chicken needs to be crispy on the outside, juicy on the inside, and the buns need to be toasty while the condiments are fresh and evenly distributed. It is no surprise that fast food restaurants often fail in one of these areas, but even fancy restaurants can be hit or miss. Surprisingly I have had good luck at a fast food restaurant called Popeyes. Whereas other fast food restaurants seem to get at least one thing wrong — resulting in a sandwich that is dry, cold, soggy, or simply not fresh — Popeyes has done a good job the few times I’ve been to one.

Have you ever heard of a “honey butter chicken biscuit”? Apparently it is a thing at some restaurants. My son came across this recipe and asked me to make it. I watched the video and thought “hmm … too complicated”. But I decided to give it a try, because the sandwich does look good!
