Easy Pancakes

It’s been a while since I posted a recipe here. This summer has been very challenging. I lost my Mom and an aunt. Bangladesh where I grew up has had big political changes. Now there’s been heavy flooding in Bangladesh that’s causing problems for many people whom I know.

With all that going on it is hard to focus on anything else. Despite all the sadness, one thing that makes me happy is cooking — especially cooking with my son. He loves making breakfast with me.

He and I have been refining this recipe below for a long time. It’s our favorite recipe which we often make. These pancakes bring me comfort, helping me through my tough times, and most importantly, connect my family together. I hope you give this one a try and let me know your thoughts.

Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp. baking powder
  • 1 tsp. baking soda
  • 1/4 cup sugar
  • 1/4 tsp. salt
  • 1/4 cup oil
  • 1 1/2 cup milk
  • 2 tsp. vanilla
  • 1 egg
  • Butter or oil for cooking

Instructions

In a large bowl add all the wet ingredients: oil, egg, vanilla, and milk. Mix everything well.

Next add the dry ingredients: flour, baking powder, baking soda, and salt. Mix everything until the batter is smooth.

You can adjust the amount of milk for a thinner pancake if preferred.

Heat a lightly oiled (or buttered) non-stick griddle (or pan) over medium-high heat. Scoop and pour about 1/4 cup of batter onto the griddle pan for each pancake.

Cook the pancakes until bubbles form and the edges are dry, about 2-3 minutes. Flip and cook until browned on the other side and the middles are done. Repeat with remaining batter.

I love adding berries to my pancakes. Sprinkle some on top after you pour the batter, otherwise it’ll discolor the batter! Here I’m using blueberries and blackberries. Give it a try!

Serve with your favorite pancake syrup!
