Lentils with Butternut Squash

Growing up we ate lentils pretty much every day as they were nutritious, cheap, and filling. I didn’t appreciate lentils as much back then but now crave it often and miss my Mom’s cooking. My Mom tried to change things up so we didn’t get too bored with the lentils. She would find different kinds of lentils and would use different recipes to make lentils interesting. One of my favorites was fried pakoras, sometimes with vegetables or meats, that I plan to write up as a recipe in the future.

Vegetarian Tex Mex Bowl

I created a wonderful chipotle sauce for a bagel sandwich a few months back. The sauce had such a unique flavor that I thought I should use this for some other application. Rice bowls are really popular with my family and I thought the chipotle sauce will go perfectly with a rice bowl. I love creating bowls with rice, noodles, or other grains. There are so many possibilities. Rice bowls are really nice since you can customize your toppings, proteins, garnishes, sauces, and cheese.

Creamy Taco Sauce

I’ve eaten tons of tacos. I can’t count how many I’ve had over the years. From fine restaurants to “hole in the wall” type places. Some tacos are bland, flavorless, and dry. Others are really good! I’ve tried numerous attempts at making sauces that enhance the flavor of tacos. After researching many sites and books, this is what I made. It came out excellent! You can use this sauce for a variety of things. Burritos, nachos, tacos, chips, you name it!

Curried Asparagus Soup

One of the spring vegetables I really like is asparagus. I also really like curry, which is basically a combination of spices including cumin, coriander, turmeric, fennel, cinnamon, cloves, and chili. I’ve been making a lot of soups lately, as my family just really likes that style of meal. It’s also less work quite honestly. For this recipe I decided to combine these three elements into something that I call curried asparagus soup.

Broccoli Cheese Soup

I was introduced to broccoli cheese soup at a Panera Bread when I lived in Wisconsin, and grew to really like it. It was perfect to cut the chill of a cold Wisconsin winter. It’s been many years since I’ve had this soup, and so recently I went to our local Panera Bread and ordered it, hoping to enjoy it once again. To my surprise, I was disappointed. The soup wasn’t how I remembered. I don’t want to be too critical, but there wasn’t much of a broccoli taste, the broccoli wasn’t visible, and the cheese seem a bit processed somehow. I also like soup with more of a punch. Maybe it’s just me that has changed.

Potato Medley with Honey Sauce

The inspiration for this dish came from the Covid-19 pandemic. As it started people panicked and hoarded so many things. When people had a chance to buy vegetables, they tried to get something with a long shelf life. I myself did this and stocked up on things like potatoes, yams, sweet potatoes, and butternut squash. These things don’t last forever, however, and that led to today’s recipe.
