As a kid I ate lentils everyday and never got tired of them because my mom was good with many different recipes. Lentils are nutritious, cheap and filling and I want to share a favorite recipe with you today.
This recipe is pretty easy as you put everything in a pot and cook it until the lentils and potatoes are soft.
There is one important rule you have to follow for this recipe. While cooking, don’t open the lid until lentils are cooked — otherwise they might have a raw smell.
I like to fry up few eggs to serve with this. It’s delicious with cooked rice or roti. If you like this recipe, please let me know!
Ingredients
- 1 cup red lentils or masoor dal
- 3 1/2 cups water
- 2 1/4 cup peeled russet potatoes, cut into 2-inch long wedges
- 1/2 cup yellow onions thinly sliced
- 3/4 tsp. turmeric
- 1 1/2 tsp. salt
- 2 tsp. finely chopped ginger
- 2 tsp. finely chopped garlic
- 1 tsp. Indian red chili powder
- 1/4 cup mustard oil
- 3 red or green fresh Thai chilies
- 1/3 cup chopped cilantro

Instructions
Soak lentils in cold water for 20 minutes. After 20 minutes, wash and drain the lentils very well.
Place lentils, potatoes, onions, turmeric, chili, ginger, garlic, salt, and mustard oil in a medium sized heavy bottom sauce pan.






Use a clean hand to mix everything very well. Add the Thai chiles and water. Mix everything well again.



Cover and bring the mixture to a boil over medium-high heat. Keep an close eye so the mixture doesn’t boil over. Do not open the lid, this is crucial for the best flavor. We will be cooking the with the lid on until lentils are soft.
Once the lentils boils, turn down the heat to low. Cook low and slow for 20-25 minutes, or until the lentils and potatoes are cooked.



After 20 minutes, you can take the lid off and check to see if the lentils and potatoes are cooked. Give the mixture a gentle stir.
Taste for seasoning. Sprinkle chopped cilantro, then stir gently.


Serve this over cooked rice or Indian rotis.
