Who doesn’t like a good Chinese-style chicken and broccoli stir-fry? Tender bright-green broccoli and juicy chicken strips in slightly sweet and salty sauce. You might be amazed how fast you can make this at home with not that much fuss.
I have found over the years that making Chinese-inspired dishes is pretty easy if you have some basic ingredients on hand. My basic sauces includes soy, hoisin, oyster sauce, chili, and sesame oil, all of which I always have in my pantry. Some other essentials are ginger, garlic, and green onions.
I am using chicken breast today but if you make this, you can easily substitute boneless, skinless chicken thighs. Note that if you decide to go with chicken thighs, the cooking time might be a little longer.
I recommend blanching the broccoli ahead of time, to keep it bright, green, and tender. You’ll find that this step can really help.
Before you start stir-frying, make sure to prep all your ingredients ahead of time. This way the cooking goes fast and smooth. This goes very well over cooked white or brown rice.

Ingredients
Chicken marinade
- 2 large chicken breast, cut into thin strips (3 cups)
- 1 tbsp. chopped garlic
- 1/2 tsp. white pepper powder
- 1/2 tsp. salt
- 1 tbsp. cornstarch
Broccoli
- 8 cups water
- 1 tbsp. salt
- 2 cups broccoli florets, cut into bite size pieces
Stir-fry sauce
- 2 tbsp. soy sauce
- 2 tbsp. oyster sauce
- 2 tbsp. molasses
- 1 tsp. sesame oil
Stir-fry
- 1/3 cup oil



Instructions
Chicken marinade
Place all chicken marinade ingredients in a medium-sized dish, use a clean hand to mix everything together, then set aside for 10 minutes.


Broccoli
Bring 8 cups of water and salt to a rolling bowl over medium-high heat in a large pot. Place broccoli florets, stir well, then cook for 5 minutes. After five minutes, remove broccoli and place in a ice-bath (mixture of ice and water). Once the ice melts, drain broccoli well then set aside until needed.




Stir-fry sauce
While your broccoli cooks, make the stir-fry sauce. Place all stir-fry sauce ingredients in a small bowl, stir to mix, then set aside.


Stir-fry
Heat oil in a large wok over medium-high heat. Once the oil is hot add chicken, spreading it in a thin layer.
Leave the chicken undisturbed for 1-2 minutes. You want some color on the chicken. After couple of minutes, stir the chicken, breaking the chicken pieces if stuck together with a large slotted spoon or a spatula.



Cook chicken for another 4-5 minutes, stirring in between, until cooked through. Then add broccoli, stir well, add sauce. Stir to mix everything well. Turn down the heat. Cook for another 2 minutes. Taste for seasoning. Turn off heat.


Serve the stir-fry over some cooked white or brown rice and enjoy!
