Squirrels Tavern is a historic spot in downtown Corvallis with great selections of beer and wine but really awesome food. Even better, the prices are reasonable, and you feel like you’ve stepped back in time to a historic tavern in an old city; it has a real bar atmosphere. The service is really nice and the cooks have been there a long time and really know their way around a kitchen.




Recently my friend and I went to Squirrels for lunch. We both decided to order their Squirrels burger. I had that burger many times before and really liked it. It has a hand-spanked beef patty with two types of cheese, a fried egg, ham, and condiments.

This burger was so good that I decided to try making it at home. It turned out so good that I am excited to share my version with you. I hope you try this and let me know your thoughts.

Ingredients
- 1 lbs. 80/20 ground beef
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 2-3 tbsp. canola oil
- 4 slices swiss cheese
- 8 slices deli ham
- 4 slices cheddar cheese
- 4 eggs
- 4 Hawaiian style or sesame seeds buns
- 4 tbsp. full fat mayo
- 4-5 tsp. pale ale or Dijon flavored mustard
- Shredded lettuce
- Tomato Slices
- Thinly sliced yellow onion (optional)

Instructions
In a medium sized mixing bowl add ground beef, salt, and pepper. Use a clean hand and mix everything gently.


Divide the mixture into four equal sized portion. Then shape each portion into round patties. A little bigger than the size of your hamburger buns. Set them aside until you are ready to cook.

Heat a large nonstick electric skillet over medium-high heat. Add about 1 tbsp. of oil. Then place the hamburger patties to the skillet. Cook for 3-4 minutes, then flip, and cook for another 3-4 minutes. Depending on how you like your hamburgers cooked.


While your burgers are almost done cooking, butter your hamburger buns.


Move the hamburger patties to one side of the skillet. Place the hamburger buns to the other side of the skillet. Toast the bun until golden brown. Set aside until needed.


Then place one piece of swiss cheese over each patties, followed by two slices of ham, and cheddar cheese.



Turn the heat to very low and cover. Turn the skillet of once you see the cheese are melted and burgers are cooked to you liking.

While your burgers are cooking you can fry up 4 eggs. To fry the eggs, heat a medium sized non-stick frying pan over medium-high heat. Add 2 tbsp. of oil. Once the oil is hot add the eggs one at a time.


Sprinkle some salt and pepper over the eggs. Cook until whites are almost set, about 2 minutes. Then carefully flip the egg and cook until the whites are set, another minute or two. Depending on how runny you want your eggs to be.


To assemble the burgers spread mayo on the bottom buns and mustard on the top buns. Followed by lettuce, sliced tomatoes, onions, the patty with melted cheese and ham, and an egg. Top it off with mustard slathered buns.
