If you follow my blog you might have noticed that I like to use ham a lot. I like ham for its taste and because I often find a good deal on it at the grocery store. I typically first make a ham dinner with part of it, and then have lots of leftover ham from which I make a variety of dishes. One of the easiest and most popular is ham salad. I serve this as an appetizer or as a filling for a sandwich.

Hoppin’ John with Creamy Polenta

Back when the Covid-19 pandemic first hit I decided to stock up on essentials like cans of beans and soup that have a long shelf life. Even though I didn’t know exactly what it was, I wound up with a few cans of Hoppin’ John’s black-eyed pea stew in my cart. It looked really delicious! I never got around to making this until recently. While I did rely on ready-made stew from the can, I found it necessary to add quite a bit of extras to jazz it up and help the stew reach its full potential.

Christmas is a special holiday that l look forward to each year. Often after a big holiday meal I have leftovers such as cooked ham and mashed potatoes. I found myself in this circumstance this year and so wanted something creative to make with them. Yes I could have served the leftovers as is — my family would have been happy that way — but I really wanted to try out the recipe that I present to you today.

Vietnamese Noodle Soup with Ham (Pho)

I developed a passionate love for Vietnamese food when I used to work for a popular Asian fusion restaurant in downtown Corvallis. One of the best experiences was when our boss and owner — whose family was from Vietnam — would make a feast for us employees after the evening shift. We got to sample authentic homestyle dishes that were not on the regular menu. It was like a trip to Vietnam! One of my favorites was pho made from ham bone, a recipe that I will share with you today.

Thai Coconut Soup with Ham

What do you do when you have a lot of protein leftover from your holiday? In my case I had a lot of ham left over, which goes great in sandwiches, of course, but another obvious way to use ham is in soup. There are lots of traditional American soups that use ham, and I love many of them. This is Global Dine In, however, and so I decided to show you something that’s a global fusion. In this case I decided to use my leftover ham to make Thai coconut soup, one of my favorite soups in the whole world.

Ham and Potato Soup

I love cruising grocery stores and finding things I haven’t noticed before. A couple days ago I was walking in the deli section and noticed some small packages of cooked ham that were only about one pound each. This seemed a super-convenient size for making different meals during the week. Once I bought a couple of these, I decided to make a creamy ham and potato soup. As the weather gets cooler outside I like making soups for our family.

Ham and Lentil Soup

When I was working for the university I used to create many soup recipes for use in the fall and winter. We went through vast quantities of soup as it was consistently a popular entrée. Every day we offered multiple soups especially as we needed to cater to students who may be vegan, vegetarian, or gluten free. One of my most popular soups was the one I present today.
