One Pan Sausage and Vegetable Dinner

My pantry is full of spices and spice mixes from all over the world. Many of them were given to me by friends who know how much I love to cook and experiment with new flavors.

Some of the best mixes come from Penzeys Spices and today I feature their Ozark Style Seasoning. It is a Southern U.S. style blend of black peppers, numerous herbs, and salt. I have been using it to make the most delicious roasted vegetables one can imagine. The balance of spices is incredible and I use it below in this recipe.

This dish is super simple to make and cleanup is also easy! If you can’t get this spice mix, you could make your own blend of thyme, sage, paprika, and black peppers.

This is an easy one-pan dinner made with my favorite vegetables and hearty Irish-style garlic-flavored sausages. You can customize the veggies to your liking. I served this dish over garlic mashed potatoes.

Ingredients

  • 4 cups or 3 medium sized zucchini trimmed and cut into 1/2-inch wide half moon
  • 1 cup mixed mini seeded bell peppers, cut into 1/2-inch slices
  • 1 cup red onion, cut into 1/2-inch wedges
  • 1 cup or 2 Roma tomatoes, cut in to 1/2-inch wedges
  • 1/4 cup peeled garlic cloves
  • 2 tsp. Penzeys Ozark seasoning
  • 1/4 cup canola oil
  • 1/4 cup green onion thinly sliced
  • 1 lbs. or 1 package, sausage, I am using Johnsonville Irish O’garlic

Instructions

Preheat oven to 425 degrees

Spray a 10 x 13-inch baking pan with a non-stick cooking spray. You can line the pan with parchment paper as well for a easy cleanup!

Add zucchini, peppers, onions, tomatoes, garlic, Ozark seasoning, and oil.

Toss to combine all ingredients well.

Nestle in the sausages, then place the baking pan in the middle rack of your preheated oven. Roast for 30-40 minutes or until the sausages are cooked through and the vegetables are caramelized. Flip the sausages half way for even cooking. Sprinkle 1/4 cup thinly sliced green onions for garnish! This dish goes very well over creamy mashed potatoes.
