I was introduced to tater tot casserole by my mother-in-law a long time ago when I first came to the States. I remember liking the dish a lot but didn’t make it at home that often.
As I get older I like making and eating traditional American dishes for our family. One pot dishes like casseroles come in handy for leftovers to put in my husband’s and son’s lunches. They also don’t complain about eating leftovers when it is this casserole! 🙂
I like traditional casserole made with cream of mushroom soup, but half way into making everything (the first time around) I realized I didn’t have any mushroom soup on hand! Fortunately I had cream of celery, and so used that.
I also used dry onion soup mix to make it more flavorful, along with shredded Mexican cheddar cheese.
After trying this out several times and getting approval from my picky eaters at home, I decided that I can share the final result with you.
Chances are you might already have a favorite version of tater tot casserole, but I encourage you to give this one a try. You will be impressed by how good it is when you use cream of celery soup!
Ingredients
- 1 lbs. ground beef
- 1 1/2 cups yellow onion diced
- 2-3 cloves garlic, mince (about 1.5 tsp.)
- 1/2 tsp. red chili flakes
- 1 tbsp. onion soup mix
- 1 10 oz. can condensed cream of celery soup
- 2 14.5 oz. can cut green beans, drain well
- 1/4 tsp. each salt and ground black pepper
- 1 1/2 cups shredded Mexican style cheese
- 1 32 oz. package frozen tater tot

Instructions
Preheat oven to 350 degrees Fahrenheit.
Heat a large heavy bottom sauce pan over medium-high heat. Add ground beef, breaking into small pieces. Cook the beef for 4-5 minutes, stirring and breaking the large pieces.
While the beef cooks, spray a 13 by 11-inch baking dish with non-stick cooking spray, and set aside.
Add onion and garlic to the beef, cook for another 3-5 minutes or until onions are soft.

Turn down the heat to very low, the add the onion soup mix, celery soup, salt, pepper, and drained beans. Gently stir all ingredients well. Turn off the heat.
Transfer the beef mixture to the prepared baking dish and make sure to spread evenly.
Top with cheddar cheese and finally top with tater tots.

Bake the casserole in a preheated oven to 35-45 minutes or until the tater tots are golden brown and the cheese is melted.

Serves 6-8
