Stir Fry Chicken with Peanuts

I love making quick and easy stir-fry dishes at home. It doesn’t take too long to make and it doesn’t have to cost much either. You can control the balance of meat or other protein that you use, and what type and how many vegetables you want to include.

Today we are making stir-fry chicken with peanuts. I like to make this in a wok, but you can do it in a non-stick frying pan as well. It’s best to first prep and organize everything you want to have in the stir fry. Once you start stir frying it will be be done in 15 minutes or less. During those 15 minutes you won’t have much time to chop veggies and so forth.

The main ingredients below are just chicken, onions, and celery. Feel free to add other types of vegetables like chopped carrots and bell peppers.

You can serve this dish over rice or noodles with a side of steamed, grilled, or sautéed vegetables.



  • 4 pieces or 2 cups boneless-skinless chicken thigh, large diced
  • 1 tbsp. cornstarch
  • 1/2 tbsp. golden mountain seasoning sauce
  • 1 tbsp. sherry vinegar
  • 1 tsp. sesame oil



  • 2 tbsp. oil
  • 1/2 tbsp. each ginger and garlic, minced
  • 3 red fresh or dried chili (if you like it spicy you can chop the chilies, but I left it whole)
  • 1 cup yellow onion, medium diced
  • 1 cup celery, medium diced
  • 1/2 cup green onion cut into 1-inch pieces
  • 1/2 cup roasted, unsalted peanuts
  • 1/4 tsp. ground black pepper



Mix all chicken ingredients together in a medium sized bowl and set aside for 20-30 minutes.


Whisk all sauce ingredients together in a bowl and set aside.

Heat a large wok or non-stick deep frying pan over medium-high heat. Add 1 tbsp. of oil. When the oil is hot, add the chicken, spreading it out as much as possible to get nice golden color on it. Keep the chicken undisturbed for a minute, then flip the chicken pieces over and cook for 5-6 minutes until chicken is cooked through, stirring in between.

Push the chicken to the side of the wok, making a well in the center. Add onion, chilies, and celery. Cook for 2-3 minutes stirring a few times.

Turn down the heat to low and transfer the chicken and vegetable mixture to a plate.

Add another 1 tbsp. of oil in the same wok or pan. Turn up the heat to medium-high, then add the garlic and ginger. Cook for 30 seconds, then add the sauce mixture. Turn down the heat to low and cook until the sauce thickens a bit.

Add the chicken and vegetable mixture to the thickened sauce and stir. Next, add the green onions and peanuts. Taste for seasoning. Mix well and turn off the heat.

Serve the stir-fry over cooked white or brown rice and enjoy.
