Fudge-Stuffed Peanut Butter Cookies

I am so excited for this recipe because I think I’ve hit upon something truly new. Although I love to cook from scratch, sometimes it pays to “cheat” a little and use a premade ingredient from the store. The secret ingredient of these awesome cookies is Hersey’s hot fudge topping. This comes only in a glass jar and somehow seems much better than any other hot fudge topping that I’ve tried. Just to be clear, don’t buy the type in a plastic bottle — it is not nearly as good.

Pico De Gallo

Pico de gallo is a type of salsa. While it may seem similar to regular salsa, they both have their share of differences! Pico de gallo contains less liquid and it’s much more chunky. It’s commonly used in tacos and fajitas. I like to put pico de gallo on lots of things like omelettes, quesadillas, and rice bowls.

Chicken Fries with Honey Mustard Sauce

It is hard to come up with interesting and tasty recipes sometimes. It’s like hitting writer’s block. In that case I ask my teenage son what type of recipe would be interesting. I created a wonderful chipotle sauce for a bagel sandwich a few months back. The sauce had such a unique flavor that I thought I should use this for some other application. Rice bowls are really popular with my family and I thought the chipotle sauce will go perfectly with a rice bowl. I love creating bowls with rice, noodles, or other grains. There are so many possibilities. Rice bowls are really nice since you can customize your toppings, proteins, garnishes, sauces, and cheese.

Creamy Taco Sauce

I’ve eaten tons of tacos. I can’t count how many I’ve had over the years. From fine restaurants to “hole in the wall” type places. Some tacos are bland, flavorless, and dry. Others are really good! I’ve tried numerous attempts at making sauces that enhance the flavor of tacos. After researching many sites and books, this is what I made. It came out excellent! You can use this sauce for a variety of things. Burritos, nachos, tacos, chips, you name it!

Caesar Dressing

One of the most popular salads we sold in my old restaurant was Caesar salad. This is generally made with romaine lettuce, parmesan cheese, croutons and a Caesar dressing. There’s lots of different ways to make this dressing, but today I want to show you how I like to make it. The main ingredients are mayonnaise, garlic, oil, anchovies, parmesan cheese, and mustard. I read somewhere that the original version of Caesar dressing did not contain anchovies, but they are more popular now and I do indeed prefer to use them.
