My family loves this sweet chili chicken from our local Hawaiian restaurant called Local Boiz Hawaiian Cafe! Since we like this so much I decided to try it out at home.
First I created their special sauce, which is now our favorite sauce to drizzle over rice, noodles, or steamed veggies. It’s very easy to make!
For the chicken, I use chicken breast, but you could of course use boneless skinless chicken thighs. I “butterfly” the chicken so that it cooks evenly. Marinating the chicken for a good amount of time also gives the chicken more flavor.
You can grill or pan fry the chicken as you like, but grilling gives more flavor. Since we are using chicken breast, try not to overcook the chicken.
Sweet chili sauce is pretty easy as well since we use store-bought sweet chili sauce!

Ingredients
Chicken Marinade
- 3 Chicken breast
- 1/2 tbsp. minced ginger
- 1/2 tbsp. freshly minced garlic
- 1/4 tsp. pepper
- 1/4 tsp. salt
- 1 tbsp. oyster sauce
- 1/2 tbsp. molasses
Sauce
- 2 tbsp. oil
- 1/4 cup onion julienne
- 1 cup sweet chili sauce
- 1 tsp. chicken base
Local Boiz “Da Sauce”
- 2 tbsp. soy sauce
- 4 tbsp sugar
- 2 tbsp. water
- 1/2 tsp. fish sauce


Instructions
Make the Local Boiz “Da Sauce” sauce first. Place all sauce ingredients in a glass jar. Mix until the sugar dissolves. Set aside until needed.


Marinade chicken breast in all marinade ingredients. Make sure to marinate for at least 2 hours in the refrigerator! Overnight is better.


Once done, bring out the chicken for at least half an hour before grilling.
Heat an electric indoor grill over medium-high heat. Lightly oil the grill. Once the grill is hot, place the marinaded chicken. Cook the chicken until done.


Remove, then cool slightly and slice the chicken. Set the chicken aside while you make the sauce.


Heat a pan over medium heat. Add oil, and once hot, add the onion. Sauté the onion for 2-3 minutes. Add sweet chili sauce and chicken base.


Turn down the heat and gently simmer for 5 minutes. Add the chicken pieces. Cook until chicken is warmed through. 3-5 minutes.


Taste, then serve over cooked rice along with the sauce!
