Sometimes I get an intense craving for chicken wings. Not boneless wings, but full-flavor bone-in wings. I like all kinds of flavors, but usually I prefer spicy wings with a hint of sweetness.
Recently we went to a chain restaurant that’s all about wings in our town, but we came away disappointed somehow. I therefore decided to try out a few of my own chicken wing recipes which I have been storing for years as handwritten notes. I will be sharing a few of them with you in the next weeks.
Today’s recipe is oven baked and then tossed in a sweet and spicy glaze. I like to make my wings in the oven instead of frying. The oven doesn’t waste oil, smell up the house, or add more calories than is necessary. That doesn’t mean I don’t ever make fried wings. I have my days where I like to fry them.
It’s important to dry the wings well before they are marinated. This will ensure crispy wings.
These are perfect for any game day appetizer. Seriously, these were much better than I had in a restaurant.
Ingredients
Marinade
- 2 lbs. chicken wings
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1 tsp. paprika
- 1 tsp. salt
- 1/2 tsp. ground black pepper
- 1 tsp. baking powder
- 1/4 cup all-purpose flour
- 2 tbsp. canola oil
Glaze
- 2 tbsp. unsalted butter
- 1 tbsp. brown sugar
- 1/4 cup Franks hot sauce

Instructions
Preheat oven to 425 degrees Fahrenheit. Line and spray a baking sheet with parchment paper. Set aside.

In a large mixing bowl, add wings, garlic, onion, paprika, salt, pepper, and baking powder. Mix everything very well.


Next add the flour and mix very well.


Arrange wings, skin side up in prepared baking sheet in a single layer (pictured below). Drizzle oil over the wings.

Bake in preheated oven turning every 20 minutes until wings are crispy and browned. The total cook time will depend on the size of the wings but may take up to 1 hour. Mine took about 35 minutes. You can also use a thermometer to check for doneness. It should be between 175-180 degrees! Remove from oven allow to rest for 5 minutes.

For the glaze, heat a small pan or skillet over medium heat. Melt butter, then add brown sugar, and hot sauce.
Be careful! It splatters. Turn down the heat and cook until sugar dissolves.

Transfer cooked wings to a bowl and pour the glaze over. Toss to mix and serve!
