I don’t buy meat every time I go to the store, but when I find a special price, I often stock up and then freeze what I don’t use right away. A few months back I bought frozen diced pork at a great price, then got it out today. I am using the pork to make this delicious red curry recipe. Note that you can make this with something besides pork — like chicken, beef, or even tofu.
This is a very simple and easy way to make Thai curry. Most of the time it takes is to simmer the curry on the stovetop. If you use chicken, it will take less time.
My husband and I love Thai curries. Most of the time we eat out is try out new Thai restaurants. We have found a few good ones in Oregon.
Since eating out can be expensive, I like to make Thai curries at home. And honestly — I think you’ll like this homemade version better than what you’d find in a restaurant.

Ingredients
- 2 lbs. diced pork or chicken thighs (cut into bite size pieces)
- 3 tbsp. Thai fish sauce
- 3 tbsp. red curry paste
- 3 tbsp. palm sugar
- 2 tbsp. canola oil
- 1 tbsp. tamarind puree
- 1/2 cup water
- 1 14 oz can full fat coconut milk
- 1/2 cup cherry tomatoes
- 2 tbsp. julienne ginger
- 2 tbsp. chopped cilantro or basil

Instructions
In a large mixing bowl, add curry paste, pork, palm sugar, and the fish sauce. Mix everything very well. Set aside to marinade for 20 minutes.


Heat a heavy bottom sauce pan over medium-high heat. Once the oil is hot add the marinated pork. Cook for 7-10 minutes stirring often.


Next add the tamarind puree, tomatoes, ginger, water, and the coconut milk. Stir well, then bring it to boil.


Turn down the heat, cover, and cook for 40 minutes or until pork are tender. Taste for seasoning. Stir in the basil or cilantro.


Serve this curry over cooked rice and enjoy!
