I was going through my old recipes recently and stumbled upon pork chile verde, which looked simple and delicious. If you don’t speak Spanish you should know that “verde” means green.
When I made this at the university, the students loved this dish and we always sold out.
Pork chile verde is a Mexican green chili stew made with pork (duh). It is supposed to be cooked in a sauce made green with green chili peppers and tomatillos. The pork is cooked until it is really tender.
Not to worry, you don’t have to make the green sauce from scratch. I am using store-bought verde sauce along with a few other fresh ingredients to make it super easy.
This recipe is so good you’ll feel like you died and went to heaven. I have found another delicious filling to fill my tacos! You can of course serve this stew with rice, beans, and other Mexican dish dishes.
Ingredients
- 2 1/2 lbs. pork shoulder or pork butt cut into (1 1/4 inch) pieces, about 5 cups
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 tbs. oil
- 1 cup yellow onion, chopped
- 1 tbsp. garlic, minced
- 1 tbsp. jalapeno, minced
- 1/2 tbsp. ground cumin
- 1 (16 oz) jar salsa Verde
- 1/4 cup fresh oregano
- 1/3 cup cilantro, chopped
- 1 1/2 cups water

Instructions
In a large mixing bowl add pork, salt, and pepper. Use a clean hand and mix well. Then set aside until needed.


Heat oil in a large, heavy-bottomed pan over medium-high heat and brown pork cubes well on all sides. Transfer pork cubes to a bowl then set aside.




Make sure you have at least 1 tbsp fat in the pan, and add onion, garlic, and jalapeno in the same skillet. Turn the heat down to medium, then cook for 5 minutes, stirring occasionally until soft.


Add cumin powder, cook for 30 seconds.


Add pork cubes along with any juices might accumulate in the bowl, oregano, cilantro, Verde sauce, and water.


Turn down the heat to low, then cover. Cook for an hour and a half or until pork is fork tender.


Stirring occasionally to prevent sticking to the bottom of the pan. Taste for seasoning.

Serve over cooked rice or use as a filling for tacos!
