My husband and I love Thai food. We love going to a favorite local Thai restaurant once in awhile, but to get our fix I also make Thai curries at home.
You don’t have to spend hours making curry pastes from scratch to make restaurant-worthy Thai food at home. You can find very good curry paste in your local Asian markets or you can order it online. My favorite curry paste is Mae Ploy brand. I have tried all of their curry pastes and was very happy with the results.
Today I will share my easy red curry pork recipe. This recipe is cooked in the oven so you don’t really have to fuss over it very much. I came up with this recipe by luck.
I had pork chops to use up one day and I decided to put all the curry ingredients together and bake it in the oven. It turned out really good. After that I made this many times to make sure it’s worthy of this blog.

Ingredients
- 2 lbs. pork chop or pork loin chop, about 4 pieces
- 1 14 oz. can full fat coconut milk
- 2 tbsp. fish sauce
- 2 tbsp. palm sugar
- 2 tbsp. Thai red curry paste
- 1/2 tsp. ground cumin powder
- 1/2 tsp. ground coriander powder
- 1 small tomato, cut into bite size pieces, about 3/4 cup
- 1 small onion, julienne, about 3/4 cup
- 3 pieces of lemon grass, each piece about 2 inches long
- 3 lime leaves
- 1/3 cup cilantro leaves
To serve
- White or brown rice, cooked

Instructions
Preheat oven to 375 degrees Fahrenheit.
In a medium sized bowl or measuring cup add coconut milk, fish sauce, palm sugar, curry paste, cumin, and coriander powder.


Use a whisk to combine everything well. Make sure there are no lumps.

In a large oven proof pot place pork pieces, then scatter around the tomatoes, onions, lemon grass, and lime leaves.




Pour the curry sauce all over the pork. Then cover the pan and transfer it to preheated oven.




Bake for an hour, then stir every thing gently. Take the lid off then cook for another half an hour or until the pork is very tender!


Once the pork is done then remove from the oven. Make sure to taste for seasoning. Stir in the cilantro before serving.


Serve this wonderful curry over cooked white or brown rice!
