This is an easy, flavorful, and juicy oven-baked chicken thigh recipe with our favorite Mexican-style flavors.
Our family loves to eat Mexican-style meals at least once a week. You can pretty much adapt to every dietary need and individual taste with Mexican food.
I am using chicken thighs because they are affordable and stay juicy after cooking. You can definitely use boneless/skinless chicken thighs or chicken breast. Just keep in mind that the cooking time will vary depending on what parts of the chicken you are cooking.
I like to serve this over cooked rice and sauteed zucchini. Don’t forget to drizzle the yummy juice all over the rice and veggies.
I had leftover chicken meat which I used later as a taco filling and topping for nachos.

Ingredients
- 6 chicken thighs, excess skin trimmed
- 2 tbsp. taco seasoning
- 1/3 cup mayo
- 1/3 tsp. salt
- 1 tbsp. lime juice
- 1 tsp. lime zest
- 1 tbsp. minced garlic
- 2 tbsp. finely sliced chives or green onion

Instructions
Preheat oven to 350 degrees. Then spray large baking dish with non-stick cooking spray and set aside.

Place all chicken ingredients in a large mixing bowl. Use a clean hand and mix everything well. Set them aside to marinade for 30 minutes.


Place marinaded chicken in a prepared baking dish, make sure to scrape out all the extra marinade and place over the chicken. Then place it in the preheated oven.


Bake for 45-60 minutes, or until internal temperature reaches 165 degrees. Sprinkle extra chopped chives over the chicken before serving.
