Strawberry Spinach Salad

Strawberry spinach salad is one of my go-to salads for dinner parties — whether they are fancy or not-at-all fancy. This salad always gets rave reviews from everyone who tries it. Since strawberry season is just around the corner, it’s a great time to share this!

The poppy seed dressing gives this salad a real WOW factor. Fortunately it’s not at all hard to put together. All you need is a mason jar for all the ingredients. Close the lid then shake it until the sugar dissolves and the oil emulsifies.

There is a perfect balance to the sweet and tangy dressing that you drizzle over baby spinach, arugula, sweet strawberries, feta cheese, and crunchy candied pecans. My husband’s favorite part is the candied pecans.

Ingredients

Dressing

  • 1 cup canola oil
  • 3/4 cup granulated sugar
  • 1/3 cup, plus 1 tbsp. red wine vinegar
  • 1 1/2 tsp. dry ground mustard
  • 1 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1 1/2 tbsp. poppy seeds

Salad

  • 1 6 oz. bag baby spinach
  • 1 6 oz. bag baby arugula
  • 1 pint strawberries, sliced
  • 8 oz. feta cheese, cubed, or broken into desired size
  • 5 oz. candied pecans (Trader Joe’s)

Instructions

In a mason jar, combine all salad dressing ingredients and shake until sugar dissolves and oil emulsifies. Set aside until needed.

In a large or small individual salad bowl, place greens, strawberries, nuts, and cheese.

Add dressing and toss gently, serve immediately.

Serves 6-8
