One of my favorite things about going out to a Chinese restaurant is getting piping-hot egg drop soup to start out the meal. You need few ingredients to make this but the taste is amazing when it’s done right.
Last week I bought several rotisserie chickens for a gathering and had a lot of carcass left over so decided to make a big batch of Asian-style chicken stock. The flavor of this stock was so good that I decided to make a variety of soups like chicken and corn soup and egg drop soup.
Egg drop soup doesn’t require much effort or time. You need good-quality chicken stock (in this case my homemade version), eggs, sesame oil, green onions, salt, pepper, sugar, and cornstarch to thicken the soup.
If you don’t have the ingredients to make your own stock, store-bought is fine, just adjust the salt and pepper ratio to your liking. It will depend on what brand or kind of stock you buy, like if it’s low-sodium.

I like making and enjoying this soup when I want something quick, easy, and nutritious. I often add chopped tomatoes for a different flavor.
Ingredients
- 6 cups Asian style chicken stock
- 1/2 tsp. white pepper powder
- 1/2 tsp. salt
- 1/2 tsp. sugar
- 4 eggs, beaten
- 2 tbsp. cornstarch
- 1/4 cup water
- 1 tsp. sesame oil
- 2 tbsp. thinly sliced green onion for garnish

Instructions
Beat eggs in a medium sized bowl and set aside.


Heat chicken stock over medium heat in a heavy bottom soup pot. Stir in the salt, white pepper, and sugar.

Skim of the scum which floats over the surface.
Bring the stock to a gentle boil. Slowly stir in the eggs.

Whisk cornstarch and water in a small bowl. Add the mixture to the stock. Stir the soup continuously as you drizzle in the slurry, or you’ll get clumps of cooked starch in your soup. You can use more or less depending on how thin or thick you want your soup. I used 2 tbsp which was enough for this recipe. Turn the heat off.



Drizzle the sesame oil over the finished soup and stir well. Divide the soup into individual bowls and garnish with green onions and enjoy!
