Italian Style Grilled Shrimp

Shrimp is one of my favorite types of seafood. I like its mild flavor and it takes very little time to cook.

Shrimp is pretty expensive to buy at the grocery store nowadays. I wait until they are on sale then stock up. You can make many types of cuisines with shrimp.

Today I am sharing my Italian-style grilled shrimp recipe with you. It’s a simple herb-marinated shrimp which I cook on an electric grill. You could also cook it on an outdoor grill or even sauté it in butter.

Cook until the meat is an opaque white and pink color. Shrimp makes a huge transformation in terms of how it looks from raw to cooked. You cannot ignore the shrimp while cooking, because overcooked shrimp has a rubbery texture which is not appetizing.

I like to keep the tail on when I cook shrimp because it looks more authentic that way. You can certainly take the tail off if you prefer. I am using extra large shrimp for this recipe; there were about 21 shrimp in a pound. It will take 3-4 minutes to cook depending on the temperature and size of the shrimp.

Ingredients

Shrimp

  • 1 lbs. XL shrimp about 23 pieces, peeled, deveined, and tail intact
  • 3 tbsp. canola oil
  • 1 tbsp. minced garlic
  • 1 tbsp. minced oregano
  • 1 tbsp. chopped parsley
  • 1 tbsp. chopped chives or green onion
  • 3/4 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1/4 tsp. chili flakes
  • 1 lime zest (1 tbsp.)

To Grill

  • 1-2 tbsp. canola oil

Instructions

Place all shrimp ingredients in a medium sized mixing bowl. Use a clean hand to mix everything well. Set a aside for 30 minutes before grilling or pan frying.

Once you are ready to grill heat an indoor electric grill over medium-high heat. Then oil the grill grates. Then place the marinated shrimp to the grill.

Spread the shrimp, then cook for a minute an a half. Flip the shrimp then cook for another minute an a half, or until shrimp is cook through. It should take about 3-4 minutes. Transfer the cooked shrimp to a serving plate.

Taste for seasoning. I like to serve these with couscous, grilled peppers, and onions.
