Zucchini and Sausage Chowder

If you’re thinking of starting or expanding a garden, one of these easiest and nicest things to grow is zucchini. They produce a lot in a short amount of time and are great tasting vegetables that can be used in many different foods. Like last year, I planted too many in my garden this year! Dal with Zucchini

Growing up I ate masoor dal (red lentils) virtually every day and loved it for its taste. Now that I’m older I also realize it’s great because it’s affordable and very nutritious as well. Another thing that I love is zucchini, which I never tasted before coming to the U.S. Dal and zucchini are not a common thing to eat together, but I’ve discovered over time that they go great together! Now I want to share this with you in a recipe.

Sausage and Vegetable Soup

This week I organized my freezer to see what I have on hand so I can make a meal plan for the week. In exploring the bottom of my freezer I discovered several different types of sausage that I had bought some time ago and never got around to using. I found kielbasa, andouille, and ground pork sausage. I used to use these for special occasions like happy hour in which I would serve the sliced sausage on a platter with other finger foods. Now I’m not doing that because of the pandemic. To use up the sausage I decided to try it in a soup.

Zucchini Waffle

One of the nice things about being home with family is that my son has developed an interest to cook with me. We enjoy making breakfast together on the weekend. We make pancakes or waffles every week. We try to combine spices, fruits, or vegetables to make it more healthy, nutritious, and interesting.

Chicken Tagine

For the past few weeks I have been harvesting quite a bit of zucchini from our garden. Let me tell you it was a battle to grow these zucchini! First we were fighting off deer. We put up a fence. Then came rabbits. We had to add a layer of chicken wiring to keep those critters away. Now we have mole problem. I think we have called truce with the mole.
