Ham Salad Sandwich

If you follow my blog you might have noticed that I like to use ham a lot. I like ham for its taste and because I often find a good deal on it at the grocery store. I typically first make a ham dinner with part of it, and then have lots of leftover ham from which I make a variety of dishes. One of the easiest and most popular is ham salad. I serve this as an appetizer or as a filling for a sandwich.

Hoppin’ John with Creamy Polenta

Back when the Covid-19 pandemic first hit I decided to stock up on essentials like cans of beans and soup that have a long shelf life. Even though I didn’t know exactly what it was, I wound up with a few cans of Hoppin’ John’s black-eyed pea stew in my cart. It looked really delicious! I never got around to making this until recently. While I did rely on ready-made stew from the can, I found it necessary to add quite a bit of extras to jazz it up and help the stew reach its full potential.

Vietnamese Noodle Soup with Ham (Pho)

I developed a passionate love for Vietnamese food when I used to work for a popular Asian fusion restaurant in downtown Corvallis. One of the best experiences was when our boss and owner — whose family was from Vietnam — would make a feast for us employees after the evening shift. We got to sample authentic homestyle dishes that were not on the regular menu. It was like a trip to Vietnam! One of my favorites was pho made from ham bone, a recipe that I will share with you today.
