Easy Guacamole

I don’t remember the first time I ever had guacamole, but it’s not something that I grew up with. It’s one of those things that I discovered as an adult and really love to eat any chance I get. Today I have an easy guacamole recipe for you to make. It uses fresh avocados, onions, tomatoes, and a few other ingredients. This is fast and easy to make and so much better than anything you would find ready-made in the store.

Begun Bhaji (Fried Eggplant)

I love eggplant for its delicious taste and smooth and velvety texture. It doesn’t hurt that it’s healthy too. Growing up, my Mom used eggplant in many dishes. She would either deep fry it in a chick pea flour batter, stir fry it, or pan fry it in a skillet. The pan-fried version of this dish is called Begun bhaji, which is what I make in this recipe.

Creamy Pasta Salad

I love the simplicity of pasta dishes. You don’t need a long list of ingredients, spices, or long hours in the kitchen to get something delicious on the table. Many of the ingredients could already be in your pantry. What makes it easy is store-bought pasta. You can try this with as many different shapes or color of pasta as you like.

Tahini Sauce

Over the years, I have bought many jars of Tahini paste from the store, which is basically just toasted sesame seeds with oil. I buy this because I like to combine it with spices, lime juice, and other ingredients to make a Tahini sauce to use as a dip, to make hummus, or to drizzle over meat on the grill. Tahini sauce is really versatile and wonderful and you need to know about if you don’t already!

Poppy Salad with goat cheese

Today has been very hot and I didn’t have much energy to cook. I wanted to make something healthy for my family, and something that wouldn’t heat up the house. I came up with the idea of a salad since I had enough greens in the refrigerator and some frozen veggies.

In 2004 I was living in Wisconsin and one day was eating lunch at work with a co-worker who grew up in Denmark. She had a very delicious-smelling soup that I had never seen before. She offered me a taste and said it was called Vichyssoise.

Masala Green Beans

As I was going down the produce aisle, I saw some green beans at the grocery store. They looked really fresh, almost as if they were picked that same morning! It may not be the right time of year for fresh green beans, but they looked too good to pass on the opportunity. I bought a couple of pounds.
